I just noticed the 2nd part of the question.

Some cars (like mine) have both installed on the thermostat housing, some earlier cars have both sensors installed on the bottom left corner of the radiator (there's a wiring kit to move it from right the side of engine to left and vice versa)

Not sure why there would only be one but perhaps one is on the thermostat the other on the radiator. And I'm sure if your car doesn't have A/C then you obviously don't need that 2nd one.
