There is a cool coilover perch that replaces the spring pad in the factory location.
So to answer the question, you can use the GC to have rear height adjustability and the setup is located in the factory locations. In addition you can select from a variety of 2.25" ID springs for the rear (2.5" ID for the fronts).
...you retain factory-type rear springs only the rates get cut about in half? Then you put coilovers on that also have a weak rate. That way you have adjustment but you don't put all the load on the shock mounts.
There was a GRM article on lowering a 944. They did the same thing except, of course, that car had stock torsion bars instead of coil springs. They actually just unloaded the torsion bars a bit and put on the coilovers.
I'm sure you could get the right rate to do this in the coilover spring since those are probably standard size, e.g. 2.5" or something, but I'm not sure about the stock spring. Is there some standard sized spring that fits on the rear perches or is that completely application specific?
