Adapting an e32 differential only requires using your current rear cover (8 bolts and not a problem) but may also require using your current input shaft/flange. If this is the case, you simply have to observe the specified torque settings for the shaft nut when you install your input shaft into the donor e32 unit (to make sure the crush ring seats correctly and keeps the correct tension on the pinior gear). Altogether, its 1/2 to 1 hour labor to change the rear cover and input shaft.
Adapting an e38 differential doesn't look promising. Both the M60 and M62 equipped cars use very different gear housings, including mounting points. The post 1995 e38 V8/V12 differential casings seem to have changed significantly from 1994/95 and earlier e32/e34 cars. I don't believe it would work.
By the way, with an 840 automatic, you may want to consider something a bit shorter than the 3.15 gears. Changing to the 3.15 only yields a 7.5% change, which may not be worth the bother. 3.25 would yield 11% and 3.45 almost 18%. Korman or Dinan can probably suggest an appropriate gear set based on experience.
