I've run mine at 80/90mph over a long distance with the OAT just over 100 degrees F with the A/C on and the temp gauge (amazingly) stayed pegged at the half way mark. It's NEVER moved above that. I drove a '91 850i for a while and the gauge would vary quite a bit depending on OAT, speed and A/C load. Turned out it was the fan clutch that waa faulty.

There was a posting (think it was here) a while back where high temps were the result of some debris between the shroud and the rad - that might be worth a check.
