1) With aftermarket chips, you need to run high octane (as least that's what's in the Dinan installation manual).

True, Dinan et al add more advance to the ignition. OTBE, more advance = greater probability of pre-detonation.

2) The M70's have no knock sensor, so if you do go into knock conditions, you'll blow out valves, etc.

True, but most likely blow a hole in your piston. Knock is actually a flame front travelling at the speed of sound. Flame front propogation should not be supersonic.

3) The best performance is with higher octane (why else would racing cars and airplanes use high octane).

Octane by itself doesn't add power. It permits the engine to run with more ignition advance, increasing the combustion pressure curve, by forestalling pre-ignition.

4) Higher octane burns cleaner and hotter (hence the question of engine temp & fuel quality).

Octane only inhibits pre-ignition. It doesn't affect the temperature or emissions.

5) I've never heard that high octane can damage an engine, but I have heard the opposite (low octane damage/fouling).

The only downside to high levels of octane is that if your engine isn't adaptive (i.e., knock sensors "listening" for higher or lower AKI) then you'll be filling up on essentially a useless additive. In certain cases, especially MTBE, it can range up to 3% of volume. So you're only using 97% of the volume for the stuff that actually burns.
