I have recently disconnected my batteries. Will this clear my stored fault codes? And if so, will a recurring "fault" (ie oxy sensors) be immediately restored into memory?

If one of your O2 sensors, or both, is/are bad, then you should have a fault code stored. The dealer will be able to read it or you can do it yourself either using the "flash" code from the fault code chart or a purchased diagnostic module.
