Lez,
First thing is to check all your fluid levels to make sure that you don't have a leak or have a low system. Then make sure that the belts are all good and tight. If they are fine then you definitely have a power system that is in need of attention. Since I haven't taken an E31 power steering system apart yet I can't give you exact instructions, but perhaps one of the other posters has and can give exact instructions. Regardless of the problem, to a DYI like yourself all you need is the proper information and it will be an easy fix.
