If you're thinking of an 840/850 you should be forewarned that you'll never be happy with any other car again. These are fantastic automobiles that exhibit exceptional styling, performance and engineering - the E31 is in a class of it's own. These machines are complex and the process of discovering and understanding all the intricacies is part of the joy of ownership.

I think the choice between the 840 or 850 is largely dependant on finances. The 850 is usually more expensive at the outset and the costs of maintaining two of everything means the ongoing costs are higher. On the other hand, as one of the guys on the board likes to say "everybody should own a 12 cyclinder once in his life".

Color & manual/auto are really personal preferences. I didn't go looking for a Laguna Green model, but because everything else about the car was exceptional I took the color. Now I'm glad I did and prefer L/G to all the alternatives. I wanted an automatic because I was tired of clutching & shifting my Porsche around the city.

Take the time to have a good look at the Archives here on the board and you'll get a better sense of the things to be on the lookout for with respect to both the 840 and the 850.
