I have never had the pleasure of looking under the hood of a BMW V-12 but does your fan have one of those hydraulic clutches? It's designed to tighten up when hot to make the fan move more air.

When driving, the ram effect makes the fan do very little work but when idling, it really makes a difference.

With the age of your car, I'd expect you're overdue for a new clutch. I'm speaking from E34 experience, though.
