I know this is bordering on a religious subject, especially if there are any woodworkers in the crowd, but I have really had super luck with the water-based poly urethane products instead of the oil-based varnishes.
I have found that the Varathane floor finish grade products are extremely simple to apply, do not yellow with time and are VERY tough and scratch resistant. I use it on furniture, floors, wood paneling etc. You can easily apply 3 coats in an afternoon with a brush and the stuff flows (read no brush marks) like magic. Clean up is with soap and water and you can use the product indoors without worrying about passing out. It also does not build up the way oil-based poly-u finishes can; hence the relative toughness of the finish.
Be sure to give any oil-based stain that you use at least 48 hours to dry before applying the finish. You can get the stuff at Home Depot in most parts of the country.

As an experiment I tried to refinish one small piece of dash wood trim but failed to achieve satisfactory results. I'm now faced with: living with it the dash wood way it is (very milky and ugly), buying new (big $) or applying some other sort of finish. My car is dark blue with light grey interior. I've thought of painting the trim an unoffensive black or blue or grey, or maybe even a VERY offsetting color (red?). I've even thought of trying to find some type of fabric that could be applied and then covered with new clear plastic coating or even leather dyed to match the existing interior. Anyone else ever done anything this crazy?
