6.8 + 1.1 for the filter = 7.9 US quarts (this is on the second last page of my manual, after the index, under "Filling Capacities"
As for brand the manual suggests "Brand name 4-stroke HD engine oil, rated SE or higher". And elsewhere highly recommends API SF grades. The manual suggests choosing oil viscosity according to the predominant air temperature:
-40ºC to -10ºC (-40ºF to 14ºF) --> SAE 5W-20
-40ºC to - 5ºC (-40ºF to 23ºF) --> SAE 5W-30
-30ºC to + 5ºC (-22ºF to 41ºF) --> SAE 10W-30
-30ºC to +10ºC (-22ºF to 50ºF) --> SAE 10W-40
-30ºC to +20ºC (-22ºF to 68ºF) --> SAE 10W-50
-20ºC to +30ºC (- 4ºF to 86ºF) --> SAE 15W-40
-20ºC to +40ºC (- 4ºF to 104ºF) --> SAE 15W-50
-10ºC to +50ºC (+14ºF to 122ºF) --> SAE 20W-50

Now that you have all that, several here opt for the synthetics over dino juice. I recently converted to Mobil1 10W-30. Check out the information on oil from Pelican on the link below.

'88 750iL


I am due to change my oil and filter for the first time in my 91 750iL. How many US quarts and what brand/weight do you guys use? The owners manual does not say how much oil.
