Sorry to sound pessimistic, but the guy sounds like a little bit of a cowboy, in intentions if not always actions - I'd think he'd be sesnitive to the expectations of the owners of these kinds of cars - most of us seem to be enamoured of these "high calibre" cars, and if he intends to keep his customers, he'd be wise to keep those expectaions up by taking on that attitude too...
Best guess would be to pull the codes first and see what the DME thinks is wrong; the speed-up could be a self-diagnostic thing, and the reduction in MPG would suggest to me the DME is in fail-safe mode with MAF-determined mixture - without the O2 sensors (if you can safely assume he's only affected what he's said he's touched!)
I'd get the codes ASAP... if your MPG is down, then if the car runs rich too long you're going to be damaging the cat convertors (unburnt fuel going into them & burning there will damage/slag them).
