I also have an e34 (540) and a Volvo 740 turbo. The Volvo steering feels much more connected and tighter than the e34. However, the bimmer runs circles around 740 otherwise. Both of the cars have upgraded suspensions and tires.

The 740 feels fine up to 5/10ths, then it kind of trips all over its live axle rear suspension. The e34 does not feel good until it's driven hard.

Two different tools, two different purposes.
