It's not just additives. The premium fuel itself has less chemical energy per gallon than regular. There is absolutely no reason to use a higher octane than your engine demands.

Having said that, however, remember that if you have P-chipped the engine, then you probably NEED 91 octane to keep out of detonation conditions under hard acceleration. That's the price you pay for the higher performance. BMW compromises a bit on performance to allow use of mid-grade fuel. All the chippers do is reset the numbers to take advantage of the premium fuel.
