I don't think the E34 is any better or worst than other models of a similar generation. BMW simply spends their engineering budget on styling and performance issues, less on minor details. It's those details that drive us crazy and give us reason to complain.
Going out on a limb, I would say that most of the problems on BMW's are due to poor material choices. Inadequate development does not allow them to find this out before production begins (or even ends.) Since the resulting problems occur well after the warranty period, BMW does not get any feedback, therefore changes do not happen. (eg, aux fan resistor, a decade-old problem)

I can deal with the small problems, but what I can't accept is that BMW do not publish factory service manuals for us to fix those problems. I would have been happier if they had 'fessed up on that nikasil thing, too.

It's just a matter of accepting what you're getting for your money.
We also shouldn't forget that the E34 like most bimmers is a touring sedan designed for German autobahns, at least in the past decades a different world from US roads.
