If the oil pressure light goes off after starting then this is normal.If it doesn't go off or if it comes on/illuminates while driving then there are three possibilities:
1.Oil pressure switch (cheap fix)
2.Oil filter clogged (unlikely with regular maint)
3.Oil pump (not so cheap)

I have recently purchased a 91 535i, and the oil pressure light goes off telling me to check the owners manual. All the manual says is to check my oil level, which is fine. Can this mean anything else, or am I dealing with a faulty switch? Thanks for the input.
