I put 16s on my E34 before installing Dinan springs and new Boge gas shocks, and noticed no difference in ride quality from the 15s. Turn in and grip were greatly improved, though. If you're going to upsize the wheels, plan on lowering the car. I was hoping not to have to lower it, but didn't like the looks of the car with the bigger wheels and the stock springs. At this point I'm happy that I lowered it, since it totally transformed the car from a great cruiser to a nice sports sedan. However, there's a fairly big loss of ride comfort with the new springs and shocks even with my "soft" shocks and modest lowering from the Dinans. I'm happy with the changes, but if you really like the ride comfort of the stock car, don't change the springs.
