There's all kinds of odds and ends that could cause problems. My 530i developed small leaks under pressure, causing slow coolant losses that were undetectable under casual inspection.

I suggest trying a pressure test. Also, if you can get access to one of the diagnostic computers (like they have at the dealer), you may be able to find out pretty quickly what's going on.

ALso, many repair shops will give free tech advice to BMW CCA members. You may want to try this angle.
