I went throught almost the same thing with my '90 535i. A warped head was the culprit (caused by my driving the car hot too long after a water pump failure -- tried to stretch it to the next exit -- bad idea). Repeatedly lost water and overheated following the water pump replacement. Two more visits to the dealership here in Baltimore failed to diagnose the real problem. Finally accurately diagnosed and fixed by P&W BMW in Pittsburgh. ~$2200 to mill the head, replace the head gasket, and replace a head bolt that had sheared. No problems since.

'90 535i(5-spd) 243,000+ miles and going strong...
'33 325 (5-spd) 143,000+ miles and going strong too...
