Look at some online tire sales sites like TireRack.com (http://www.tirerack.com/tires/tiretech/tiretech.htm) They will have lots of tech information on what size rims a given tire can fit onto. The tech specs for each tire will also list the range of rim widths that a tire of a given size will fit.

Unless your current tires are at the extreme small edge of fitment for your 7" rims, they should fit fine on a 7.5" rim in the same diameter.
