Stripping down to bare metal isn't usually an option these days... believe there are a couple few layers of important stuff under the paint... the factory primer is usually a great base and shouldn't be removed. When I had the 318 painted the body shop only removed everything on the hood where some "spider webbing" was happening around some chips.
I would recommend just having them fine sand, fill and paint like normal. (with clear coat of course).
