Paul deWitt has been keeping track of this one... There is no easy answer because high end BMWs (which the E34 M5 was back in the day) were available with BMW Individual paint. I've included the link the FAQ for reference.
The standard blue colors available (that Paul has tracked down) are:
Estoril Blue Metallic "Estorilblau Metallic" (335)
*A very common E36 M3 color, but was first used on the E34 M5. Surprised?
Macau Blue Metallic "Macaoblau Metallic" (250)
Mauritius Blue Perlcolor "Mauritiusblau Perlcolor" (287)
*There were only three US-spec E34 M5s produced with this color (I believe 2 are on the mailing-list even!).
Sonderlackierung
These are the paints produced by BMW Individual. If the refrence label on the passenger shock tower says "490" then it was painted in an BMW Individual Color. M5s after 10/94 carry a label that says "BMW Individual" on the shock tower and a more specific color description or paint code number. 92 M5 Tourings were ordered with "sonderlackierung" colors.
Aqua Metallic "Aqua Metallic" (451)
Night Blue Metallic "Nachtblau Metallic" (453)
Santorin Blue "Santorinblau" (318)
*BMW Individual special order color. Only known to be used on M5 Tourings. Similar to Audi's Nogaro Blue, as seen on the S4.
