I've examined almost all of the options you mentioned. However, non of them offers the kind of contact surface that the N-ring brakes do. They are significantly larger.
E34 M5 Euro: 345X32mm
Brembo Gran Turismo: 332X32mm
Mov'it: 330X34mm
E31 850csi: 324X30mm
E34 M5 US: 315X28mm
E34 540: 302X28mm
E32 750: 302X28mm
Brembo does also have a 355X32mm unit, but they require 18 inch wheels. Also the Brembo units are nearly $3000. The Mov'it kit comes just under $2500. The Mov'it kit is actually a modification of the Brembo kit. I spoke to Brembo last night (club meeting) and they've mentioned development of 8 piston brakes! I'm sure they'll be monsters. Stoptech does not offer a kit for the E28/E34. UUC does not either.
As it shows above, The N-ring brakes are tops and E32 brakes are at the bottom end. HOwever, the E32 brakes are significantly cheaper... So if N-ring brakes are around $1800, they will be the obvious choice over the Brembo and Mov'it. However, I don't know about their pad aviability and the durability of the aluminum rotors.

You might be just as happy with non-Euro brake setup from the E34 M5.
My experience with the E28 was that the brakes tended to warp very
quickly... There was an upgraded hub thingy (technical term) that was
supposed to help (see item #20:

I don't know that the Euro setup is going to offer better (faster?
Slower?) braking, but certainly the cooling / heat dissipation is
better. You might look at the UUC "very serious brake" alternative
though (http://www.uucmotorwerks.com/). I'd link directly, but the UUC
site is very frame intensive (Rob! :).
Other alternatives, the expensive Mov'it
