Those missing horses will be right back where they belong. Dinan's chips are OK, but still not as good as Jim C. Others have had great success with Mark D'Sylva tuned chips.
I assume you drive it hard, which is good. These engines don't like to be driven gently for short trips. Every time I take my M cars out, they get a thorough flogging once they have reached operating temps. This has kept them very well-mannered and running smooth. They run so rich upon startup that you have to make sure it comes up to temp then drive it hard for a few minutes to give it that old Italian Tuneup.
Maybe you want to try a different gas station. I like Sunoco and Amoco here in Northern VA. Exxon pings (in both my M cars and my wife's V6 Mustang) and sucks bad.
Also check/replace the air and fuel filters, cap, rotor, plugs, and plug wires to make sure they're not showing their age. Make sure there are no loose fittings or hoses on the intake plenum or throttles, as vacuum leaks rob power and are potentially dangerous to the engine.
