They can already make it work, the question is will they produce a V8 M3? I believe that they have no current plans to do so. It would be a response to market pressure with does not exist at this time.
I am sure the 2001 engine will be an amazing engine but I am hesitant to go with the first year production. I see this as a similar situation to the '95 having a 3.0 and the '96 having a 3.2.
I would wait unless you absolutely have to have it ASAP. It's always wise to not buy a first year car. You'll probably have to pay MSRP or close to it anyway. I've put money down for a place in line but my dealer assured me that I can back out and get my deposit back if I change my mind.
Does anyone know anything I don't that could help me make up my mind what to Do? I'm ready for the new one but I don't want to be kicking myself after a year or two b/c I didn't wait.

No one knows for sure what they're going to do, even BMW. Plans change. They did build a V8 test car but that doesn't neccessarily mean we'll ever see it. Live for today
