There are many reasons why a manufacturer would test a prototype in the real world. Many things cannot be fuplicated on the track. For example:
How does the car function in rush-hour traffic in 100 deg with the air-conditioning running.
What happens if the car hits a major pothole or curb?
What amenities would be useful when the car is driven daily? What is annoying after using the car daily
What rattles develop after the car has been driven daily in a real world city?
The list can go and on. It would be very hard to duplicate at the track to what goes on in the real world.
