See Bob's reply above. The cars are worth so little (compared to Ferraris, right?) because of supply/demand issues, I'm guessing. Over 30,000 CS coupes were built, including the 2.5 liter cars and some 1,095 CSL's. By comparison, only 1,426 Ferrari 365 GTB/S were made.
Today, I see a different Coupe on the road about once every 3-4 weeks. I have not seen a Daytona in the last year. And believe me, the sound of that 4.4 liter, quad-cam V-12 with 6 Webers sticks in your memory! And it's just one reason why the people who can afford one REALLY want one. Combine that powerplant with an exotic bodystyle, plus the Ferrari mystique and you'll have your "market price" for such a car. I'm also guessing that the people with the $$$ who are interested in Ferraris aren't aware of the merits of the CS coupe. The "yuppie" label that's associated with BMW's doesn't help either, I'm sure.

If you're really good with prep work and can take the car down to a reputable bodyshop, you can probably get a very good paint job for less than $3-4K. Add another $1-2K and you might get decent prepwork.
This type of job should be quite acceptable unless you tend to go over everything with a fine-tooth comb. If you want a show-quality car, look for someone who has already given his car a competent refurbishment. A visually clean Coupe can be had for $10-15K. But who knows what lurks beneath...
