I recently put a 3.5 motor from a 1979 EURO 6 SERIES I OWNED in my '72 because the engine was neglected by the previous owner, i'm curious to know should i also put in the 5speed tranny,and what is the biggest rear end{gear ratio} i can use or should use with the engine & tranny and from what old bimmer?

A lot of the early 635s came with close ratio 5-speeds (1:1 5th gear) and 3.07 diffs. The diffs have the same case and are interchangeable. This is true for all 6 cylinder diffs from 69 up through about 81, except for the 7 series.
As mentioned in another post, the overdrive 5 speeds are much nicer for cruising. If you want faster acceleration, a lot of US 72-76 six cylinder models came with 3.64s, although limited slips with this gear set are hard to find.
You will need to have your coupe driveshaft shortened to install a 5-speed since its case is longer.
