The opening and closing cycle of the thermostat actually helps the car to cool. If the thermostat is stuck open or not present, the coolant flows through the radiator too fast, and it re-enters the engine un-cooled. I learned this when the thermostat broke on my '83 633csi. A new thermostat suddenly solved my warm-up problem, and made it run cooler.
