What is the procedure exactly? Merely unbolt the 2800 swingarms and bolt up the 3.0 ones, connect the brake lines and e-brake cable, bleed and hit the road?

For the most part. Apart from all the other extra things you may find yourself wanting to do (springs, shocks, etc)
1) It's wise to change to a late model master cylinder, slightly greater capacity and the internal proportions front to rear are better suited to rear discs.
2) you need different e-brake cables
3) often you will discover the proportioning valve in the back of the car is, well, needing replacement. Call Carl Nelson at CNPR for assistance in replacing yours (the ones for disc brake cars are NLA from the dealer.)
4) REPLACE THE BRAKE HOSES WITH NEW ONES. You can get nice teflon-lined steel braid hoses from CNPR or Maximillian or CSi for under a hundred bucks.
5) REBUILD THE CALIPERS and load them with new metalmaster pads.
