My favorite setup was Marchal lows with H-1 bulbs and Cibie highs with H-4 bulbs. Very bright but with good cutoff to keep from blinding oncoming drivers. Not sure that Marchal is available anymore, but Cibie is. Hella is also a popular conversion and seems to be more available.

Or if you want to go the really cheap route, you can always get sealed beam halogens. They're only about 4 bucks and are better than the original incandescent sealed beams.
