Your car will run better with a thermostat. It will run too cool without.

You can get away without a 'stat in summer (in a pinch), but in winter the car will take forever to reach proper operating temp.

Besides having the wrong 'stat, you have to be careful during installation not to let the flange of the thing slip down between the housing flange and the gasket. That will comprimise the gasket and spray coolant all over the place. Ask me how I know...
