I used Walnut veneer on my console tray and it turned out real nice. I took off the old varnish and sanded down the old veneer as much as possible, then using contact cement glued the new veneer and I just worked it with my hands to get all the air out and make all the surfaces to contact. I then trimmed the edges, sanded it smooth and then stained a couple of coats of Walnut stain, finished with a few coats of satin varnish sanding in between coats. It's pretty easy.
