My favorite (and what I got on my '99) is Estoril Blue and Gray interior. I also think the Titanium Silver (hated the old Arctic silver) with gray interior is nice. Whatever you do, don't get black leather because I personally find it gives the car a less spacious feeling in the M3 and it will also be damn hot on bare skin in the summer. The only color I really dislike is Dakar yellow. The nice thing about Estoril Blue is that it is not very common (only on M3s, newer M Roadsters, and M Coupes) so you're less like to see a car like yours on the road.
As for wheels, I'd stay away from the 10-spoke standard wheels. I got the Contour IIs (no cost option) and personally like them better than the other two and they are super easy to clean (definitely wouldn't be the case on the 10 spoke). The Alloy wheels look very nice as well and can take more punishment but they should be cleaned more often because they look much worse when dirty than the Contours.

: Thanks everyone for the input on my post below regarding the E36 or E46 M3. I'm going with the E36. Here in Southern California, we are fortunate to have a wide varity of dealerships & therefor cars to choose from.
