I think I really wanted Konis, but they just make an insert, not the whole strut. Hollowing out the old strut and sticking the insert in wouldn't even be such a big deal, but the process looks like it leaves the itself open to being easily damaged and flying apart.

Um, no? the koni inserts work great and are fairly easy to do. I wouldn't worry about them falling apart, there is basically no way. Even if the bolt came out, the strut housings wouldn't come out... remember, the stock shocks are inserts, too.
