It is correct that the performance fuel maps are "at the ready" or as you say "ready for disposal" but unless conditions are perfect those maximum curve points on the map will not be used. However, this is also true of the stock fuel maps as well!

Just remember that the "fuel maps" are really not what is causing a power loss. The knock sensor is what is causing it. When the ECU hears knock, it pulls back timing which kills power very quickly, and it pulls it back to a stock level. What chip makers need to do is to tune the knock sensor thresholds to be a bit more aggressive and to allow a harmless level of knock...
