I don't think I've got any air in the system. I flushed the system before the event w/ new fluid and bled the brakes twice at the event.

I've never had a problem w/ rubber lines causing this much of a spongy pedal (even on my much faster and heavier Camaro). I guess I could try stainless lines, just not sure which ones I should get. Any suggestions?

The assumption here is that you don't have air bubble's in your brake fluid and you have fresh fluid installed.
Maybe that you are boiling the brake fluid in the line at the caliper. Bleed some fluid at each line for eyeball inspection. Or your stock rubber brake lines are flexing and expanding due to heat and age and need to be upgraded to stainless steel brake lines.
