Proper heel-toe only involves the right foot to modulate both gas and brake in a manual shift (w/ clutch) car. The left foot only operates the clutch. The right foot in essence, uses the ball (or "toe") of the foot to modulate the brake pedal and the "heel" of the foot to modulate the throttle.

Before I go further, from my experience, you need to first know how to "match revs" before you can understand the concept of heel/toe driving.

Let me know if you do "match revs" and I'll explain how to do it and go forward...

It is time for me to learn heel and toe downshifting. I have a '99 M3. Is this best done with left side of ball of foot on brake and right side on the throttle? Then roll the foot left to right? Or am I all messed up?

Tips appreciated.
