the official snow tire reccomendation is 17" so i'm not sure how anyone would arrive at the coclusion that 17s won't fit...

I have seen a few winter tires that do come in the 18-inch diameter. The size of the front OEM tire on the M5 is 245/40ZR18. Rear is 275/35ZR18. The winter tires I saw close to this size were the Dunlop Winter Sport M2. The smallest tire size was 245/40VR 18 (same as front OEM with V speed rating). The largest size was 265/35VR18 (the width is 10 numbers lower than the OEM rear with again a V speed rating). If you want your M5 to stay on 18-inch wheels all year round and there is alot of snow and ice in the winter where you live, this is the best winter tire for the car.
