Could you run this simulation for my car using 500 HP. I'm curious to see the 0-60 improvement because a friend of mine just won 0-60 bragging rights by purchasing a Z06 vette [0-60 4.0].

Sorry to be the bearer of bad tidings. To get 500HP from a 3.2L engine, you'll need a big turbo, which in turn means turbo lag. Based on my own experience (700HP 3.0L engine) your turbo will come online between 3,500 and 4,000RPM. Your 0-60 will be in the 4.3 - 4.4sec range, but your 1/4 will be 12.7 @ 118-119. Just challenge your friend to a rolling start from, say, 50 mph and you'll be fine.
