The car I traded in for the M5 was a 2000 S4 with MTM stage I chip and MTM springs. You are right, seat of the pants up to 2nd gear the S4 SEEMS to accelerate harder but its due to the turbo spooling up and rocketing from 3500-5500 in the S4 where the chip puts down the serious torque. The torque curve on the m5 is very different and the throttle response is very different, so its difficult to tell the diff unless you measure it.

What I can say though, is that in 3-6 gear the M5 definetely would pull away from my MTM S4. The real strength of the M5 is on the highway and as stated many times above 80mph. No contest there.
