It appeared from the outside (the car was locked) that there were two buttons on each side with a pictogram that looked like a seat

Seat warmer - other E39s have these as well if heated seats are ordered, earlier cars had a button and dial.

a few buttons with 3 letter acronyms, and a button labelled "sport".

The car will have DSC-off and Sport-mode buttons for sure, and (depending on year and options) may have the PDC-off and rear-shade controls. Other 5ers get the DSC-off button, may have the PDC and rear-shade buttons, but won't have the sport-mode button.

The M5 also gets the tire-warning-system reset button immediately to the right of the steering column, this is apparently available in Europe on non-M5s but not in the US.
