LeMans Blue seems to be the msot popular M5 color since it's nearly impossible to get it on any other BMW. It looks great and changes under different lighting in a wonderful way. Any dark color complements the 5's I think, since it seems to add more dimension to the lines.
That's what I got on my M5.

HOWEVER, BMW paint is the softest crap in the world, and any dark color will show scratches and chips quickly. Silver, on the other hand is a classic german racing color, Ti Silver has pretty good depth (unlike Ford silver, for example) and shine, and like Bee said, you could wash your car with sandpaper and it would still look good. It scratches but doesn't show it.
That's what my wife has on her Z3.
