Question for tirerack re offset (archive)

I've got 18x8's with 225/40/18 tyres on my 95 E36 which are close to the arches even after getting them rolled. Someone said the offset is wrong. The shop I bought from say they're ET40 or ET42.
Local BMW dealer say my car has M-Tech suspension but it still sits high. Would spacers allow me to lower it a bit more and what exactly is offset
