This has been a big topic with us E31 guy's and this is what we have to do, turn everything off with the ventelation system, A/C, fan, etc. before shutting down the engine, then the next time you start you car the compressor will stay off. Hope that works for ya.

it doesn't turn on when you start the ignition ? ... The A/C always turns on albeit with the last temperature setting I selected but much of the time I don't want the system on, habit of driving with a window open I guess.
