Ya know, I'd like an upscale white meritage. Ex. Steele's Steele Cuvee, Caymus' Conundrum or Sauvignon Blanc, or Cardinale's Royale.
Now that I think of it, last night we opened a bottle of Wildhorse's '97 Trousseau Gris (aka grey reisling) to go with some bruschetta. It would probably go well with escargot too, perhaps.
* Yes, there's the 'Drive what you want' club too.
Now as to what to serve with escargot... I dunno about champagne. imho the correct procedure would be champange as aperatif before snails, served with garlic bread and followed with red wine, but then, I break a lot of rules when it comes to feasting.
