Lateral acceleration numbers given is the maximum lateral (sideways) force that the car (and of course, the tires) holds before giving way. This is usually done on a skidpad, whereas some cars can hold more depending on the diameter of it. Obviously, a larger diameter circle would require the car to not be as "tight" in the turn to complete, yet they still will increase the speed to the point where it can no longer maintain its speed and then they measure the forces.It's a good measure of handling ability but it's not everything: it doesn't measure nimbleness, responsiveness, feedback, etc, as well as other subjective "feels" towards the way a car handles.
A 750 can get over 0.87g on wide skidpads, which is what some Z3s have been rated at, but put one behind the other on some tight uphill decreasing radius turns through the Blue Ridge (you NC guys remember those, right? :)) and the one most nimble surely will make it through easier.
