I just went through all this myself this weekend. Congratulations on your choice; you're going to love it. 2 days and 250 miles into the experience, and we can't wipe the grins off our faces.
Bring a warm coat and gloves, because if it's above 40 degrees, you're going to be tempted to drive home with the top down. Also, a camera. Have your salesperson take pictures once you've finished the paperwork and are about to drive off.
What's to know? BMW's offering 5.9% up to 60 months; there's a $1500 rebate to the dealer on 2.5s, and $3k on 3.0s (all this expires 2/28). Invoice prices are on the web, and if you can get the car for $2000 above their cost, you've done very well (IMHO).
Check the net (circlebmw.com, for example) for less-than-MSRP prices on accessories like wind deflectors, floor mats, etc. If your dealership will come close to these prices, then by all means buy locally.
I also would skip the BMW alarm system. In my opinion, an alarm in a convertible should have an interior motion sensor - BMW's doesn't. Unfortunately, this means you won't have keyless entry until you install an after-market alarm. The upside is that $500 in the after-market will buy you a much more elaborate system.
What else? Learn to say "thanks" a lot as people go out of their way to tell you what a wonderful car you have.
