JonM might help here, being the MB leather guru. But, on the steering wheel, if you're using something oil based or fatty, like Lexol, which is usually great, it will make the steering wheel all tacky---and to these hands uncomfortable at best.
The oil emitted from your hands, over time, will condition the wheel. But should she ever get tacky from the sweat of your labors, why not use a leather soap, then a conditioner? (I like Lexol.)
Always though, the conditioner needs to be buffed out, and heavily, to burnish and feel natural in hand, like a leather "glove" should be.
