Default mode for any MP3 head unit is to play in alphabetical order. Randomize (shuffle) is also available for on every unit also but each implementation is slightly different. (E.g. some can randomize across entire disc, others only within folders, etc.)

As far as I know, there are no CD changers that can read MP3s. But see if you will be putting something in the trunk, take it one step farther. You could install a Neo Car Jukebox which plays MP3s off an EIDE hard drive. So if you wanted to be obscene, you could easily hook up a 100GB HD to the unit and have 20,000 songs accessible in your car.
I don't know much about speakers yet -- I'm still using the built-in stuff but I am coming around to the fact that they are rather anemic.
